3 Fast and Easy Vegan Breakfast Recipe Ideas to Get You Going In the Morning

If your morning work schedule makes you rush like super girl without having time to grab something to eat then that’s BAD!! Period!! It’s an unhealthy habit when you skip a morning meal after a long fast. Consider these healthy vegan breakfast recipes that will nourish you and are also packed with essential nutrients for good health.

Vegan breakfast recipe 1: Overnight Oats

  • 1 cup rolled oats
  • 1cup soya/almond milk/coconut milk (vegan variety)
  • 1 tsp chia seeds
  • 1 /2 cup chopped fresh fruit
  • 1 tsp maple syrup or organic honey

Mix all ingredients and refrigerate overnight. You can consume this cold or pack it with you and have it along the way. You could even heat it again if you wish.

Vegan breakfast recipe 2: Green Smoothie

  • 1 cup spinach
  • 1 sliced banana (ideally frozen)
  • 1 cup frozen mango
  • 1 cup frozen pineapple
  • 2 cups almond/coconut milk
  • 1 cap vanilla essence

Blend all the ingredients in a high power blender but blend the spinach and almond milk first to prevent spinach flakes. After this add the fruit. This recipe can be adapted according to your taste by substituting for fruit of your choice. Combined with spinach makes this filling smoothie packed with health benefits. Avoid red or purple fruits to prevent the smoothie turning an unattractive color

Vegan breakfast recipe 3: Vegan Yogurt Parfait

  • Use vegan yoghurt or soy/coconut /almond
  • Granola without honey
  • Chopped fresh fruit
  • Dried raisins or dried fruit
  • Strawberries

Place the yoghurt in a conical glass. Interspace with fruits, granola and nuts. Garnish with strawberries, dried fruit and mint leaf
